TAPA: PIPERADE OF HERBÓN PEPPERS


Ingredients:

  • Herbón peppers
  • Varied peppers
  • Courgettes
  • Ripe tomatoes
  • Onion
  • Leek
  • Calçolts (Scallion or green onion)
  • Sugar
  • Chilli peppers
  • Egg
  • Garlic
  • Pepper
  • Parsley
  • Salt
  • Olive oil


Method:

1) Stir-fry in a clay pot the garlic, chilli pepper, onion, calçots, leek and peppers all chopped in thin slices. Add the ingredients concerning the cooking times. Season.

2) When cooked add the ripe tomato and the sugar. When cooked fry an egg inside the pot and is ready to serve.
